    I use tax softeware that, when printing creates multiple files. One for the client letter, the invoice, the return, etc.

    One of the problems with converters is that they either create 1 file and keep overwriting it with the subsequently created file or they create multiple files.

    Does this software combine the files into one printed file from the start or is there at least a way to combine the various files into one file?

    The program I use to combine files is PDFTK Builder.
    This same program can be used to split files too.

    if you're looking for more advanced pdf merging/combining, you can take a look at novapdf too - http://www.novapdf.com/ - it lets you combine several files into a single PDF.
